Louis-Arnauld, originally from Bordeaux, is a classically trained chef who began his career in some of the city’s most prestigious kitchens, including Gordon Ramsay’s Grand Hotel Bordeaux, Hôtel de Pavie**, and Au Bon Jaja. After moving to Paris, he led renowned bistros such as Amagat, Jones and Donna as head chef. His cooking is rooted in rustic French tradition, combining classic technique with Basque and Italian influences.
